Steps to Make Satay Lilit Bali

Satay is one of Indonesia's most famous foods. Satay Lilit is a typical Balinese food. Some people think that Bali is not part of Indonesia, even though Bali is one of the provinces in Indonesia. 



Bali is one of Indonesia's tourism icons that is rich in various cultures and culinary. One of the most popular by tourists from all over the world is a typical Balinese food called Sate Lilit.

In this article, we will jointly learn to make Satay Lilit Bali. Here are the details.

Good morning everybody today we've got the honor of going down into the hotel Amnaya with the executive chef. Here he's gonna be teaching you and me, how to make satay lilit. It's a traditional Balinese dish, it's gonna be a lot of fun. So let's get down with chef Sigit and learn how to make a satay lilit. 

So today we're going to be cooking the satay lilit which is a traditional Balinese dish, chef Sigit is going to show us how to do it, so you can make this at home.

We've got all the ingredients, first we will cook the sambal matah which is consist of:

1. Green chili

2. Salad

3. Kaffir Lime leaf

4. Shrimp Paste (or in Balinese is terasi udang)

5. Lemongrass (Without lemongrass, all the ingredients are locked. They squeeze the tamarind seeds with all with a little water and get that lovely Citric) 

6. Limo (it has a good smell, beautiful citrus smell)


Then, upon the spice we will use:

1. Ginger

2. Coriander Seed 

3. Turmeric

4. Shallot

5. Red Chili

6. Candlenut 

7. Garlic 

8. Tomato. 

9. Shrimp Paste (or in Balinese is terasi udang)

Cook Sambal Matah:

1. First, we cook the sambal matah. All the ingredient of sambal matah is the raw material, we will start from lemongrass, bruise the lemongrass and slice it finely. We got the lemongrass beautifully cut here.


2. The second is a shallot we load some with lemongrass as well. 


3. Brunoise/fine chop the red pepper, then add to the mixing bowl


4. Cut the burner, and you roll it chip enough.


5. Use green chili in sheets as well. Just slice hot green chilies with seed. Put with other raw ingredients


7. Prepare coconut oil, we will fry Terasi udang (three-piece shrimp paste) in extra virgin coconut oil till the smell coming off.


8. Mix the fried terasi udang with raw ingredients, you can mix it with your hand


9. Add a little bit of lime juice in with this a little citric just to cut through the oils



Sambel Matah is done, if you follow the steps correctly you will get a delicious taste of Sambal Matah, it so fresh crisp. Now we are going to cook the Satay Lilit:

1. Prepare the lemongrass, shallots, turmeric, ginger, garlic, chili, tomato, and candlenuts. Chop all of these ingredients and saute these all a while. Add some terasi udang.


2. While seasoning the ingredients above, dice the fish to a fine mince

3. Blend the ingredients (No.1) use a blender, then do seasoning for the second time. Add some tamarind juice.


4. Add the seasoning to the fish and massage to a fine paste.


5. Now its time to put the fine paste (No. 4) into lemongrass. You can see the picture bellow


6. Now we can start cooking the satay on a Bali barbeque over hot coals until finding a caramelized nice dark color. 



7. Last step, serve the satay with vegetables, rice, and of course our delicious sambel matah which we have cooked in the beginning.
